Sous Chef - Queenstown

The team behind The Stoaker Room, Cromwell & Wanaka and home of Wild Earth Wines, are looking to fill the role of Sous Chef in our Cromwell & Wanaka Restaurants.

We are looking for 2 experienced, creative, well-rounded, passionate Sous Chefs who would relish the challenge of utilising their skills in this unique and dynamic environment:
The Stoaker Room create all their dishes in this one-of-a-kind cooking vessel – converted French Oak Pinot Noir barrel cookers which steam, bake, grill and smoke local foods to create a mouth-watering flavour explosion.
This position is full time with a guaranteed minimum of 30 hours per week. More hours are available during our busy catering season of October to April. The maximum hours of work will be 55 hours per week.
Rates of pay will be between $30.00-$35.00 per hour depending on level of experience and position offered.
Key Responsibilities:
Sous Chef is the assistant to the Head Chef and in charge of the Kitchen in the absence of the Head Chef. The role is made up of many varying responsibilities including:
- Directing the food preparation process and delegating tasks
- Cooking and preparing high quality dishes.
- Supervising all kitchen stations
- Supervising, motivating, and working closely with other Chefs of all levels.
- Ensuring food quality and excellent standards are maintained for all dishes created.
- Monitoring portion and waste control
- To consistently follow the policies and procedures of the Kitchen.
- Ensuring the kitchen meets all regulations including sanitary and food safety guidelines.
- Being responsible for food hygiene practices
- Being responsible for health and safety of all staff
- Assisting the Head Chef to create menu items, recipes and develop dishes.
- Assisting with determining food inventory needs, stocking, and ordering
What do we need from you to be successful for this role?
At least three 3 years relevant work experience or at least a 2-year qualification in one of these areas: Cookery, Culinary or Gastronomy.
Full training will be given on this unique style of cooking. The Stoaker is a unique cooking system created and built by our owner.
Our restaurants are open Monday – Sunday, with shifts from 9am - 10pm and you will be rostered on a 7 day a week basis.
A full driver’s license is very advantageous in this region. Ideally you will be willing to work both in the busy restaurant kitchen and at occasional off-site catering events in our region.
